  5. Put in a preheated oven at gas mark 5 and cook for approx 15 to 20 mins or untill the topping is begining to to darken and is slightly crisp.

They can be a bit tart especially if under-ripe but a little. I think it is probably my favourite pudding of all time, so I always find space for a few bags or punnets of gooseberries in my freezer.
