  4. Add 100ml of cold water (Bikkuri Mizu びっくり水 or surprise water). You can adjust the amount of the water according to your taste: more water to make it softer and less water to make them harder.
  5. Stir it a couple of times and simmer for 10 mines with a lid on. And leave another 10 mins to rest without disturbing. So, I usually set the induction cooker timer as 10 mins with the lowest heat and set another timer for 20 mins which tells me when it is ready.
