  3. Take 1 tsp brown sugar

  6. Get 1 tbls fresh mint
  7. Take 1 tsp Cumin
  8. Make ready 1 small potato peeled and cut up
  9. Get Some toasted seeds
  10. Make ready 1 tbls fresh corriander
  11. Get Salt n pepper

This salad can be made ahead, but the mint must be added right before serving, otherwise the beet juices will turn the mint red. In a large bowl, toss the beets with the balsamic vinegar and wholegrain mustard and set aside to cool completely. To make the salad, place the mint, salad leaves, crumbled feta and olive oil in a bowl and toss to combine. This Beetroot and Mint Hummus is perfect if you're following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

Instructions to make Beetroot mint & Cumin soup:
  1. Add the Beets, red diced onion and sugar spread over in a small oven dish. Cook in the oven until the beets are soft.
  2. Add a little oil to a pan and add the garlic as soon as you smell it its ready dont burn. Next add the cumin and the stock add the veg cubes to the 1 +1/2 pint of water.
  3. Add this stock and potato to the garlic and the beetroot mix thats roasted. Simmer for about half an hour.
  4. Then add it all to a blender and blend it will be thick so add more boiled water to get the thickness you like. Add to a serving bowl add the toasted seeds and fresh corriander also fresh mint. I dropped in a 1/4 tsp double cream to finish. and Enjoy.

Put beetroot and cumin in the small bowl of a food processor, season and blend until smooth. Tip into a bowl, add the mint and lemon juice, then gently stir through crème fraîche to get a rippled effect. Sprinkle with mint leaves and nigella seeds.
