- Crush the garlic. Mix with the oil and a pinch of salt, and set aside.
- Grate the cucumber coarsely with a hand grater. Place into a colander, salt lightly and leave to drain for 30 minutes.
- Stir the garlic & olive oil, lemon juice and vinegar into the yoghurt. Squeeze the cucumber very well and add it in. Add the chopped mint and mix gently so that everything is well incorporated.
- Taste and adjust quantities of salt & lemon juice accordingly. Ideally, allow the tzatziki to sit for a couple of hours in the refrigerator.
- Just before serving, drizzle with extra olive oil and decorate with a few olives. Serve with greek style pita bread and greek salad 🥗
