- Lay a parchment paper in a non-stick loaf pan and pre heat the oven at 350 degrees.
- Meanwhile in a separate bowl add the dry ingredients and mix.
- In a big mixing bowl add sugar and butter and beat on high speed till light and fluffy. (just 2 mins, do not over beat)
- Now add the egg and beat till egg is incorporated.
- Now mix coconut milk, lime juice, lime zest and mango purée in a separate bowl.
- Add half of the dry and half wet ingredients in the batter and beat on high speed till everything is incorporated. Repeat with the other halves.
- Now you can add chopped almonds and mix roughly with a spatula.
- Pour the batter into the loaf tray and give a tap or two.
- Bake the cake till 50 mins and check if it's done by inserting a tooth pick into the middle of the cake, if the tooth pick comes out clean, the cake is done. Otherwise keep for another 10 mins.
- Remove the cake from the oven and allow it to cool for 5-10 mins. Then remove it from the mould.
- In a bowl add all the ingredients for the glaze and mix well for 1-2 mins.
- Then pour the glaze over the cake and decorate it with lime slices and a few mango chunks.
