  4. Dice onions, grate carrots, slice celery, and mushrooms
  5. Saute mushrooms, onion, celery, garlic and carrot with small amount of salt and as much pepper as you like (keep in mind stuffing mix and chicken stock are already salty) until everything is soft
  6. Chop giblets and pick neck meat off of the neck, cut neck meat into small pieces
  7. Add stuffing mix and mix it together until veggies and meat are thoroughly dispersed
  8. Add enough chicken stock to moisten stuffing mix, I recommend adding a little bit at a time and stirring it around, you don't want it soggy, just moistened throughout.
  9. Stuff as much as you can in your raw turkey and put the rest in a baking dish
  10. Bake the turkey as you usually would and put the extra I'm the oven about a half hour before Turkey is ready. Continue baking the extra stuffing for the half hour that you let your turkey rest.
