  19. Prepare 3 bay leaves
  20. Get 3 big black whole cardamoms
  21. Take 3 green cardamoms
  22. Prepare 6 cloves
  23. Get 1/4 tsp nutmeg powder
  24. Make ready 1/4 tsp mace powder
  25. Take 4 dried plums

Steps to make Beef Biryani:
  1. Soak rice in water and set aside.
  2. In a pot add oil. Saute onions and cook them until golden brown. Now add cumin seeds, ginger garlic paste and beef and cook on high flame until meat changes colour.
  3. Add yogurt and keep on cooking until oil separates. Now add all the powdered and whole spices (salt, red chilli powder, turmeric, coriander powder, cloves, cardamoms, peppercorns, bay leaves, cinnamon stick). Cook for 2 to 3 minutes then add 3 cups of water and let the beef cook for 2 hours or until tender
  4. Check if the meat is tender. Add more water if required. Once the meat is done, add tomatoes and dried plums to it and cook on high flame until tomatoes are soft.
  5. Put chopped corinader and chopped mint in the masala. Switch off the flame and cover the masala with a lid. Your biryani masala is ready.
  6. In a separate big pot add 2 litres of water with 2 tsp salt. Let it get a boil.
  7. Add soaked rice to the pot and cook the rice until 3/4th are done.
  8. Now strain the rice and let all the water drain out.
  9. In a separate big pot start layering the biryani. First on the base drizzle some oil. Then put white rice. Sprinkle some food colour. Then put some amount of prepared masala. Put rice again, sprinkle food colour, then masala then again rice.
  10. Repeat the layering process until all the masala and rice are used up. Sprinkle some food colour, nutmeg powder and mace powder on top layer of rice.
  11. Cover the pot with a lid and put your biryani on dum. Try to wrap the lid with aluminium foil or any cloth. This would prevent the heat from escaping out.
  12. Keep on dum for 15 minutes. Then dish out your hot and spicy biryani and enjoy 🤩❤
