Remove with a slotted spoon and toss with the Quick tomato sauce below, then finely grate over a little Parmesan, to serve. Gnocchi are doughy, pillow-like dumplings that are boiled and served with a sauce, not unlike a pasta. They're typically made with potatoes and flour, and can easily be made gluten-free when using a gluten-free all purpose flour. This recipe doesn't use egg, which means that it's vegan.
Steps to make Gnocchi With Egg & Spinach:
- Combine all the sauce ingredients in a small bowl.
- Cook Gnocchi in boiling salted water according to the instruction OR until cooked.
- Season Eggs with a pinch Salt. Heat Oil in a frying pan over medium heat, and cook soft scrambled egg. Transfer to a plate. Cook Baby Spinach. It won’t take long. Season lightly with Salt & Pepper.
- Place drained Gnocchi on a serving plate, cover with cooked spinach and scrambled egg. Drizzle with some sauce and enjoy.
Fork the potatoes a few times and place directly on the oven rack. The eggs should be soft and loose. Once you have the gnocchi dough either with or without eggs the next steps are the same. Break off a piece of the dough and using a little bit of cornflour on the board roll the dough out into long snakes. Next cut off little pieces to make your gnocchi and now you want to shape them either using a gnocchi board or the back of a fork.
