If you're able to get Smoked then by all means, use it. Asun is also made using just Scotch Bonnet peppers (Atarodo) but that only works in Nigeria. Scotch Bonnet peppers in these parts are HOT! Asun is a peppered goat meat dish that uses more of the skin parts of a special kind of goat with really tender meat.
Instructions to make Asun (peppered goat meat):
- Wash the goat meat and season with salt, maggi, ginger &garlic and per boil for 10 mins
- Blend scotch bonnet pepper & onion, then fry it and add maggi and salt to taste.
- Put the per boiled goat meat on the oven tray and mix well with the fried pepper. Add your green & red bell and onion pepper to garnish Bake for 15 - 20 mins
It is usually prepared at parties and served straight out of the black pan. Cut the goat meat into big chunks. Make sure you cut the chunks with the goat skin. If the skin is not there, it won't be the real deal Asun. Wash and put the goat meat chunks in a bowl.
