  1. Prepare 8 goat Paya/ trotters
  2. Get Salt
  3. Prepare 1 &1/2 tbsp Red chilli powder
  4. Take 1/4 turmeric

  6. Get 750 gm yogurt
  7. Prepare 3 onions
  8. Prepare 1 onion for frying
  9. Take 1/4 tsp nutmeg & mace powder
  10. Make ready 1 &1/2 cup oil
  11. Make ready 1 tsp Garam masala powder
  12. Get 2 tbsp ginger garlic paste
  13. Take 1 inch ginger piece (Julian cut)
  14. Prepare Coriander leaves for garnishing (finely cut)

It is served at various festivals and gatherings, or made for special guests. The main ingredients of the dish are the trotters (or hoof of a beef, goat, buffalo or sheep); cooked with various spices.

Steps to make Goat Paya/ Trotters:
  1. Wash trotters carefully.
  2. Blend onions with yogurt.
  3. Now take a big pan, add trotters, salt, red chilli powder, Turmeric, coriander powder, ginger garlic paste, onion yogurt paste and nutmeg& mace powder. Bhonofy it.
  4. When trotters bhonofied,then add water and cover with lid. Cook it approximately 2 hrs in a medium flame.
  5. Check trotters and water in between cooking. If water dry out and trotters are not done then add more water.
  6. When trotters are fully tender than low the flame.
  7. In a fry pan pour oil and add onions. When onions become golden brown, immediately pour it into trotters gravy.
  8. Garnish it with ginger and coriander leaves.
  9. Serve it hot with naan.

Well, Paya is a heavy stew created from trotters/ feet of goat or lamb, bones from the leg with rich gelatin marrow covered with meat. Most cultures will have some variation of thisrecipe in their repertoire.
