The chicken pieces are marinated and partially fried before being cooked along with the sambal sauce ( the freshly made paste, consisting of chillies and tomato). Add the blended sambal paste and cook until it is aromatic and the mixture has thickened slightly. Make sure to stir so that it doesn't catch on the bottom of the pan. Add the chicken and lemongrass to the pan, and stir through so that the curry paste covers all the meat.

Steps to make Chicken Sambal:
  1. Blend Spice A ingredients to a fine paste and set aside. - Heat oil in a wok and fry Spice A. Fry and keep adding water a little bit at a time and cook till slightly dry and oil separates from the paste. This means the chillies are now fully cooked. The whole process will takes about 45 minutes.
  2. Add in the coconut milk together with the tamarind juice and leave to boil for 5 minutes. Add in the sliced turmeric leaves, salt and chicken pieces. Simmer for further 20 minutes or till chicken are fully cooked.
  3. Now add in the onion rounds, stir to mix and turn the heat off.
  4. Garnish with crispy shallots just before serving.
