  7. Remove cover, and ladle 3 oz of the braise sauce into a sauce pan. Turn it to high, and reduce. 2 - 3 minutes. Swirl in 1 T of butter. Spoon over short ribs when plating.

These Red Wine-Braised Short Ribs are even better when they're allowed to sit overnight. Transfer short ribs to a platter. Strain sauce from pot into a measuring cup. Add wine, port, sugar, cranberries, thyme, bay leaf, and peppercorns. Add salt and pepper to taste.
