Steps to make Udon with Spicy Dipping Sauce:
- Combine all the dipping sauce ingredients and check the flavour. I use 1 tablespoon Miso but you may wish to use less. Some types of miso are very salty and have stronger flavour. - *Note: If you use ready-made 'Mentsuyu', use it cautiously as they can be concentrated.
- Cook Udon Noodles as instructed. DO NOT add salt to the water. The best Udon Noodles are the frozen type that you can find at Japanese or Asian grocery stores. The frozen Udon Noodles are already cooked, so just warm them in the boiling water.
- Then drain, rinse well in COLD water, and drain well again.
- Enjoy the noodles with the dipping sauce.
To make the sauce, heat the olive oil and butter in a pan, then cook the onion and garlic until really soft. To get a springy udon (うどん) texture with a 'bite', do not overcook the udon noodles. I dish them out of the boiling water right after the noodles separates, drain them in a strainer and run tap water immediately over the noodles before serving. This soy-based dipping sauce recipe is a traditional accompaniment to dumplings, a staple of Chinese cuisine. But a dumpling wouldn't be a dumpling without the dipping sauce that goes with it.
