Gingerbread is certainly one of my favorite holiday cookies, so when a reader requested my take on gingerbread granola, I couldn't resist. In a large mixing bowl, combine the oats, nuts, salt, cinnamon and ground ginger. Place coconut oil in a small microwave-safe bowl.

  1. Prepare 40 g Nutcessity Gingerbread Cashew, Brazil & Coconut Butter
  2. Make ready 50 g Coconut oil
  3. Take 40 g Syrup (Maple / Agave / whatever you have)
  4. Get 150 g Nuts / Seeds (I used Poppy & Pumpkin)
  5. Make ready 250 g Jumbo oats
  6. Get 100 g Grains (quinoa / millet / buckwheat…)
  7. Prepare Extra spices (Nutmeg / Ginger / Cinnamon) (if you're feeling spicaaay).

Thought as I read it that it was a lot of sweetness and it is. This Gingerbread Granola is drizzled with maple syrup and molasses and spiced with ginger, cinnamon, nutmeg, and cloves. And then to make things extra festive, the cooled granola is studded with dried cranberries, toasted pistachios, and creamy white chocolate chips. This Gingerbread Granola recipe is everything you love about gingerbread transformed into a crunchy and satisfying granola suitable for breakfast, snacking and edible holiday gifts!

Steps to make Gingerbread Granola:
  1. Preheat the oven to 150 degrees celcius fan.
  2. Melt the nut butter, syrup and oil over a low heat until liquid.
  3. Add the dry ingredients to a large baking tray.
  4. Pour over the liquid and mix well with a spatula to combine.
  5. Bake for around 40 minutes, turning halfway…
  6. Eat! Out the jar / with your favourite milk / yoghurt / sprinkled over baked fruit…
