Vegetable rice with frozen vegetables If summer vegetables are out of season or you don't have any fresh veggies on hand, frozen vegetables are a great alternative! You can find vegetable mixes or medleys at the grocery store or you can just pick and choose which frozen veggies you would like to add. Stir in rice and peas; cover. I saw rice in the pantry, and also one of my favorite seasoning in the world - Better than Bouillon, Roasted Chicken Based.
Steps to make Vegetables rice:
- Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.
- Heat ghee and oil together in a pan on low flame.
- Add bay leaf, cinnamon, clove, and sauté for 30 seconds.
- Add onion and sauté until it turns light brown or for approx. 2 minutes.
- Cut chicken in cube and fry with onion
- Add ginger garlic paste and mix well
- Add chopped tomato, green peas, french beans and carrot.
- Stir-fry them for approx. 2 minutes.
- Add spices, garam masala powder, turmeric powder, red chilli powder and salt.mix well
- Add rice. Stir-fry them for approx. 2 minutes.
- Add 2 cup water and mix well
- Cover the pan and let cook on low for 15 minutes
- After 15 minutes – switch the heat off and let the rice rest for 10 minutes.
- Colour full rice ready
- When ready to serve – fluff the rice with a fork.
- Garnish with more fresh coriander leaves
