- Pick your beans.. Put it in a bowl, add water to it and leave it for about an hour
- Wash your beans by scrubbing with your hands to remove the skin of the beans.. Wash till its clean
- Wash your scotch bonnet peppers and onions and add it to the beans. Blend it till its smooth
- Put the beans mixture in a bowl, add your fish stock, appropriate water and stir it together
- Add your grounded crayfish to it, sliced onions, seasoning cubes,salt and groundnut oil.. Stir the mixture together till it is well incorporated
- Scoop the mixture into a clean nylon and add a little fish into it and tie it
- Repeat the process till the mixture is finished.. Place in a pot and add water to it and allow it to cook for like an hour
- When it's ready, it can be served rice, bread, pap etc
Moin Moin/Moi moi is a Nigerian Beans pudding cake. I love this food because of it's versatility. It can go along with different meals. Eat it with a side of Garri, Stuff it inside your Bread, dip it in Ketchup, serve a side with White Rice or Jollof Rice and the list goes on and on as your mind can create. Moi Moi can be very challenging to prepare because everything is mixed off the stove before cooking.
