They cook really quick within a few minutes, when they float they are ready, take a spoon or spatula with holes in it and scoop them out
  7. Here we made them with a simple tomato sauce but you can make them in many ways, with butter and sage is my favourite or ragout or cream and ham, ricotta and spinach… lots of options!!
