- To make crispy basil, heat up your pan medium heat then add vegetable cooking oil, once itโs medium heat hot add basil leaves, quick stir for a min or two then take them out and place them on top of kitchen towel to get rid of access oil. While gnocchi are cooking, add the butter and cream to the peas and let simmer on low to form a sauce (it will be thin). Add salt and pepper to taste. I used more pancetta than the recipe called for. The only things I will tweek are adding a little more pancetta & I would cook the gnocchi when all of the other ingredients are. Top this Brussel sprouts pesto with fricoโwhich is just a fancy word for Parm crisps.
