While the sausage is cooking, prepare your vegetables: wash, peel and slice the carrots, slice the celery, dice the onion, and mince the garlic. Rinse leek, trim and cut into thin rings. Peel celery root, carrots and onion. Then add the remaining vegetables, cook briefly, add the drained lentils and pour in the broth.
Instructions to make Sausage, vegetables and lentils:
- Chop the carrots and celery into 1cm cubes, slice the leek.
- Heat some olive oil in a large frying pan and gently fry the veg, with the thyme, for 10 mins.
- Add the lentils, stock cube and water and cook down for another 5-10 mins until the veg are cooked and water reduces down
- Serve the lentils and veg with the sausages.
