  8. Beat the eggs with the lemon juice. Gradually and slowly add some of the juice from the food in the egg and lemon sauce. Then add the egg and lemon sauce back in the food. Bon appétit!

The dish is served with the most widely known Greek lemon-egg sauce "Aygolemono". While the cod is cooking, make the fricassee. Add the butter to a pan and place over a low heat. Once melted, add the shallot and garlic and cook until soft but without colour. Add the chicken stock, bring to the boil then remove from the heat.
