Foxtail Millet Idli Recipe is a healthier version of the idli, this recipe is made only with foxtail millets and urad dal. Millets are called as a group of highly variable small seeded grasses. - Soak idli rice for 5 hours. Udad Dal for 2 hours.

- Take the batter in a bowl and add millet atta and mix well. Now add salt, black pepper, soda. Mix it well.
- If required add water make sure lumps are not formed. Batter should not be very thick or too much runny.
- Allow it to ferment for 8 Hours in a warm place.
- Grease the cups of the Idli maker. Pour the batter into each cup. Steam for 18 - 20 mins.
- Remove the idlis when slightly cool and serve with Sambar.
