Dhebras is one of the most favored of recent trending foods on earth. It’s simple, it is quick, it tastes delicious. It’s enjoyed by millions daily. They are fine and they look fantastic. Dhebras is something which I have loved my whole life.
To create dhebra, sufficient water and salt is mixed in millet flour to make a dough. The resulting dough balls are then flattened on a chakla to a round shape using a belan (rolling pin). Then, both sides of the dhebra are streamed with vegetable oil on a tava, until small brown spots appear.

Bajra is high in proteins with a good amount of amino acids. It is a good source of iron, which helps formation of hemoglobin i. Only difference I remember that the Theplas were crisp and Dhebras were soft. Is this because the cooking times and amount of cooking oil were different ?
Steps to make Dhebras:
- Add all the ingredients together to form a dough and leave to ferment overnight
- Then in the morning knead the flour and get some cling film and put it on the work surface place a small round ball and cover with another sheet of cling film. Then using a steel small bowl shape into identical dhebras.
- Deep fry these on low heat abd enjoy one leads to another cant stop eating these!!!
Small dhebras was originally considered as travel food. The dhebras were made with tamarind paste and jaggery and would stay for days without getting spoilt. Have it with sickly sweet tea, coffee, yogurt or on its own. People travelling by ship long time ago would pack a whole tin and I mean a big tin full of dhebras. On a chappati stand or any work top, cover the area with a plastic.
