  1. Take 1 duck breast ,roasted
  2. Prepare 2/3 tbsp red chili paste
  3. Take 1/3 tbsp palm sugar
  4. Get 1 bunch sweet basils
  5. Prepare 3 kaffir lime leaves,thinny sliced
  6. Prepare 1 red pepper,thinny sliced
  7. Take 4 each mushroom
  8. Take 2 lychee , from can or fresh
  9. Get 4 small pieces of pineapple
  10. Prepare 1 tbsp fishsauce
  11. Get 1/2 tsp sugar
  12. Get 1 tbsp oil to fry chilli paste
  13. Take 1 eggplants,chopped
  14. Take 2 pepper corn,halves
  15. Take 250 ml coconut milk

You definitely won't see a pot of duck curry sitting on a street food vendor's cart. The duck makes for a rich flavor and the dish looks fancy. Rub salt and pepper into the skin of the prasuma whole duck. Place the duck with skin-side up on a large roasting tin.

Steps to make Roasted Duck Curry:
  1. If you have store bought roasted duck,just sliced or tear it to bite size ..if not here i use pan grilled instead ..season duck breast with salt and pepper
  2. Sear skin side on hot pan ,medium heat wait until it turn golden brown
  3. Thinny slice duck breast,ready to use
  4. Now slice kaffir lime leaves,red pepper,prepare other ingredients ready to cook
  5. Set cooking pan or pot on low heat ,add oil ,stir fry chilli paste until fragrance ,add little coconut milk to protect from burning
  6. Keep stirring until the paste is shinny
  7. Add duck,stir until fragrance
  8. Seasoning ,with fish sauce ,palm sugar,sugar,add mushroom,eggplants ,lychee,pineapple ,pepper corn,follow with coconut milk
  9. Let it cook all well on medium heat about 10 mins ,add sweet basils ,red chilli,kaffir lime leaves ,heat off
  10. Serve hot with steamed jasmine rice :)

Wash the duck inside and out and then dry with kitchen towels. Rub the duck inside and out generously with salt and pepper. Then press the garam masala into the skin and rub the ginger and garlic pastes inside the cavity. Now place the duck breast side down in a roasting dish and place in in the oven. Heat oil over medium heat and fry my MASSAMAN CURRY PASTE for about a minute or until it starts to smell yummy.
