  17. Take Little piece of nutmeg
  18. Take 1 tsp poppy seed
  19. Prepare 4-5 green cardamom
  20. Make ready 2 black cardamom

  22. Take 1 tsp cumin seeds
  23. Get As per taste Salt
  24. Get 1/4 tsp orange food colour
  25. Prepare 2 tsp kewra water
  26. Prepare 2 tsp lemon juice

Tender green raw jackfruit is marinated with biryani spices, yogurt and cooked with rice for a scrumptious version of Jackfruit Biryani. Jackfruit has a texture of meat and really goes well as a substitute for meat that vegetarians can use. Pant's recipe but made this biryani a vegan one and also made this in the Instant Pot. I know tender jackfruit is getting popular in the vegan world.

Instructions to make Jackfruit biryani:
  1. First wash the rice and soaked in water for half hour. Wash the jackfruit and put in a pressure cooker add 1/2 cup water and 1/2 tsp salt cover and cook on high flame for one whistle come. Turn off the flame and release the pressure. The jackfruit has to be half cooked.
  2. In a grinder jar take 2 green cardamom,mace, poppy seed, nutmeg and 4 cloves. Then grind them to make a fine powder. This is biryani masala.
  3. Take a pan add half cup oil heat well then add 2 onion slices and saute untill it turns golden brown. Then transfer it in a paper napkin and keep aside. In the same pan add 1/2 tsp cumin seeds, 2 cloves, pepper corns, 1 bay leaves and black cardamom, saute few seconds then add one chopped onion, saute when it turns light brown then add ginger garlic paste and saute one minutes. Then add tomatoes, chilli powder, salt and mix well cover and cooked on medium flame untill tomatoes become mushy.
  4. Now add the boil jackfruit mix well. Add grinded Biryani masala. Then add 1/4 cup water.cover and cook for 4-5 minutes on medium flame. Turn off the flame and keep aside.
  5. In a wok take 4 cups water add remaining green cardamom, bay leaves and cumin seeds boil the water on high flame. When a boil comes add soaked rice and 2tsp salt. Boil untill the rice cooked 80% turn off from the heat and strain all water. Keep aside.
  6. Take a heavy bottom wok, turn the flame slow add half jackfruit put one layer of rice spread half onion (barista), half mint and coriander leaves. Again spread cooked jackfruit then spread mint leaves and put a layer of rice. Mix food colour in a bowl and spread on the rice. Add lemon juice and kewra water cooked on slow flame for 5-6 minutes. The biryani is ready.

You can use it as a plant-based meat substitute in many recipes. The unripe or the raw fruit has a neutral taste and pick up flavor well. Also, I feel as Biryani is authentically a Mutton dish, paying it a proper respect in terms of aesthetics is very important. And the ingredient that comes closer in texture to Red meat is Jackfruit - Kathal. A vegetable (for us Indians it is a vegetable) that is abundant in India, all the way from North to South and East to West.
