I favour a blend of 60% starch to 40% flour as a standard, all-purpose mix so if I don't have a blend already made up, I simply calculate the amount of flour needed for the recipe, divide it by 10 then multiply that number by 60 for my amount of starch in grams, then by 40 for the amount of flour in grams
