  5. Roughly chop the nuts and dried fruit if they are large.
  6. Remove the mixture from the oven and add the other ingredients, and mix evenly.
  7. Let cool before enjoying. It is so nice with unsweetened fresh yoghurt and fruit.

In a large bowl, stir to combine rolled oats, dried cranberries, pumpkin seeds, and coconut flakes. In a separate bowl, stir to combine maple syrup, brown sugar, oil, and salt. Slow and low is the key to dry-not-burnt granola. First, press the granola into an even layer before you put it in the oven, then stir it only once halfway through cooking. For really good clumps, press down on the finished granola before it cools and avoid jostling it on the pan until cooled completely.
