- Combine ginger, honey, lemon zest and water in a saucepan.
- Bring to a boil over high heat.
- Reduce heat to medium-low, simmer for 15 minutes.
- Reduce heat to lowest setting, steep for 30 minutes.
- Strain through a wire-mesh or other fine strainer.
- Allow to cool, transfer to a glass container and refrigerate up to 1.5 weeks or until all used up!
- When you're thirsty, grab a can of club soda or bottle of sparkling water, add 2-3 tablespoons of syrup over ice, stir and enjoy!

The sugar gave the ginger ale a slightly different flavor since so many soft drinks are sweetened with high fructose corn syrup.
