- Wash the potatoes and preheat the oven to 200c
- Cover the base of baking tray with salt and toss the whole potatoes in the salt. Bake in the oven for 1 hour
- Leave to cool until they are not too hot to touch. Cut each potato in half and scoop out the soft flesh. Mash with a fork until there are no big lumps.
- Cover your work surface in flour and tip the mashed potato onto it. Flatten into a square and sprinkle flour. Knead it, add flour, knead it and keep going until the dough comes together. - Break off an egg size amount of the dough and roll into a sausage. Use a sharp knife and cut into little pillows. Place on a flour dusted tray. Keep going until you have used all the dough (this is my first time so lots of different sizes!)
- Press the back of a fork into each one- this creates a ridge to catch the sauce 😋
- Carefully place all the gnocchi into the boiling water. Cook for approx 1-2 minutes, until they rise to the top.
- Drain in a colander, rinse in cold water then toss in olive oil to prevent the gnocchi from sticking together.
